As days grow cooler, nothing compares to a comforting dish that combines richness with elegance. Pork tenderloin cooked gently in a casserole, served with crispy Swedish-style potatoes, is a refined and convivial recipe. Paired with our Châteauneuf-du-Pape Blanc Esprit des Vestiges, it becomes a true gastronomic experience—balanced, elegant, and full of harmony.
✨ Signature ingredient: pork tenderloin
Tender and juicy, pork tenderloin is a delicate cut of meat that thrives with gentle, slow cooking. Paired with the sweetness of figs and the crispness of Swedish potatoes, it reveals its full character in a subtle and delicious balance.
🍴 Ingredients (serves 4)
- 2 pork tenderloins
- 8 potatoes
- 200 ml veal stock
- 4 fresh figs
- 1 bouquet garni (thyme, rosemary)
- 1 onion
- A knob of butter
- Olive oil
- Cooking oil
- Paprika
- Fleur de sel & freshly ground pepper
👩🍳 Preparation
Swedish-style potatoes
- Wash the potatoes thoroughly without peeling them.
- Slice them into thin layers, cutting only ¾ through (tip: place two chopsticks on each side of the potato to avoid cutting too far).
- Mix olive oil, paprika, salt, and pepper for the glaze.
- Brush the potatoes with the glaze, place them in an oven dish with a splash of water, and bake at 180°C (350°F) for about 50 minutes.
- Halfway through cooking, brush on more glaze for extra flavor.
Pork tenderloin casserole
- Slice the onion and brown it with butter and a splash of cooking oil in a casserole. Remove and set aside.
- Sear the pork tenderloins on all sides until golden.
- Add the onion back in with the bouquet garni, deglaze with veal stock, and simmer gently for 20 minutes.
- Add the halved figs during the last 5 minutes of cooking.
- Plate and drizzle with the cooking juices.
