A burger with a Mediterranean soul! Forget the usual patty — here, we spotlight tender red mullet fillets, a homemade tapenade and crisp purple vitelotte chips. This bold twist on the burger pairs beautifully with our Costières de Nîmes – Château des Sources, whose ripe fruit aromas and spicy freshness elevate every bite.
🧄 Ingredients for 4 servings:
For the chips:
- 500g vitelotte potatoes
- Frying oil
- Salt
For the tapenade:
- 5 anchovy fillets in oil
- 200g black olives
- 8 capers
- 1 garlic clove
- 3 tbsp olive oil
For the burgers:
- 4 burger buns
- 8 red mullet fillets
- 2 tomatoes
- 1 red onion
- Leafy greens
- 1 egg yolk
- 1 tsp Dijon mustard
- 10 cl rapeseed oil
- 1 tbsp sun-dried tomato confit
- Fresh basil
- Olive oil
- Pepper
👩🍳 Instructions:
1. Tapenade: Blend anchovies, olives, capers, garlic and olive oil until smooth. Chill.
2. Vitelotte chips: Wash and slice the potatoes thinly. Rinse, pat dry and fry for 4–5 min. Drain on paper towels and lightly salt.
3. Tomato-basil mayo: Make a firm mayo with the egg yolk, mustard, pepper and oil. Stir in tomato confit and chopped basil. Season to taste.
4. Prep the garnishes: Slice tomatoes and red onion. Pan-sear the red mullet fillets skin-side down for about 3 minutes.
5. Assemble: Warm burger buns. Spread tomato-basil mayo on the base, then layer tomato, onion, lettuce, red mullet, a spoonful of tapenade, and close.
